Cooking Instructions:

Season roast and let it sit out to reach room temperature.

Cook for 20 minutes at 500 degrees.

Turn down to 275 degrees and cook for about 15 minutes per pound.

When thermometer reads 125 degrees, remove roast from oven and let it rest until the temperature goes up to 135. (Do not cut into roast right after pulling it out of oven- it will drain the juices and dry out the roast.)
